Role Overview  As part of our Mississippi Food & Beverage team, your job as an Assistant Chef de Partie / Sushi is to be the face of Viking in the refined dining and Japanese culinary experience we deliver to our guests onboard      You will be reporting to the Chef de Partie      You will be expected to work on a 10/3 rotation (10 weeks on board and 3 weeks off on vacation). Please note that rotation lenghts vary based on staffing and operational needs onboard Viking Mississippi  Role Expectations      Ensure quality and presentation of sushi and sashimi during lunch and dinner; arrange items on an attractive display for our guests      Demonstrate excellent cooking skills and creativity to enhance buffet presentations      Ensure economical work practices and control food production to minimize wastage      Maintain food preparation and storage standards according to public health policies and company regulations      Be prepared to step-up and help other areas of culinary operations where needed      Enforce “clean as you go” work habits and maintain impeccable cleanliness and hygiene in assigned areas      Uphold impeccable grooming standards at all times by complying with Viking’s Image and Uniform Standards      Demonstrate outstanding flexibility: able to work at different times of the day, under pressure and always reflect a positive can-do attitude and the best image of Viking      You will be expected to consistently arrive on time and be prepared for work      Other tasks and responsibilities may be assigned at leaders’ discretion based on operational needs    Required Experience     2+ years' experience as a Sushi Chef or similar at a 5-Star hospitality and/or restaurant environment; shipboard experience is an advantage      ServSafe Certified, with previous experience in preparation and presentation of sushi, sashimi, and other dishes from the Japanese culinary      Guest-focused, service-oriented, positive personality, professional appearance and impeccable hygiene standards      Excellent knowledge of all public health policies, especially US Public Health and FDA Standards      Food handling certification required.
