Job Overview Faircape Life is seeking a Senior Chef de Partie to join its Catering team in Noordhoek, Western Cape. The role supports kitchen operations, ensures food quality, mentors junior staff, and delivers daily meals in a retirement and healthcare setting. Key Responsibilities Assist senior chefs in supervising and developing the kitchen team, providing guidance to junior staff. Ensure compliance with food safety standards, company policies, and procedures.
Maintain high standards of food quality, presentation, taste, and hygiene. Prepare and cook meals according to approved recipes and menu specifications. Oversee food production from preparation to final presentation in designated areas. Produce daily meals for residents and healthcare patients, including rotating menus and special dietary requirements. Assist with café food and baked goods production to maintain stock levels.
Monitor and record food temperatures during preparation and service. Collaborate with the kitchen team on stock control to minimise variances and wastage. Maintain a clean, organised, and compliant kitchen environment. Complete and maintain required food safety documentation. Support efficient kitchen operations while maintaining excellent service standards. Assist senior kitchen management with coordination of daily kitchen activities as needed.
Qualifications and Requirements Chef's diploma or qualification from a registered tertiary education provider. Proven experience as a Chef de Partie; senior level experience advantageous. Experience guiding, training, and mentoring junior kitchen staff. Experience in high-volume food production advantageous. Experience with menu specifications, standardised recipes, and portion control. Experience catering for special dietary requirements advantageous.
Skills and Knowledge Strong knowledge of food quality management and kitchen standardisation. Sound knowledge of food handling, sanitation, food safety, and hygiene requirements. Proficiency in a wide range of cooking and baking techniques. Strong understanding of food quality, presentation, and portion consistency. Ability to maintain consistently high standards across food preparation and service.

Working Hours Required to work 16.25 shifts per month according to roster, from 06h30 to 18h30, Monday to Sunday. Flexibility needed to accommodate standby procedures.
